Withering For White Needle Tea

The withering of white Pekoe needle tea is introduced as follows:
 
Withering methods include natural withering, heating withering and air-conditioning controlled withering.
 
⑴ Natural withering: The white withering place must be clean, bright and ventilated. Spread the raw tea buds thinly on a withering pallets or a withering sieve. The amount of leaves per sieve is about 250 grams. It is required to spread evenly and not overlap. The tea buds will turn black when they overlap. After spreading, put it on the rack, wither naturally or place it in the weak sunlight to dry lightly. After about 48 hours of tea withering, the tea buds are transferred to the drying process when the moisture content is about 20%. The moderately withered silver needles have changed from green to gray-white, and the bud tips have hardened, and the fresh leaves can feel poking when pressed lightly with hands.

(2) Heating and withering method: Spread the fresh leaf tea buds on tea withering machine. The “Pekoe Silver Needle” produced by this method has a fat single bud, is covered with Pekoe, has bright hair, loose or fit, and is silver-white or silver-gray in color. The inner quality is fresh and refreshing, the fragrance is fresh and sweet, the taste is fresh and mellow and slightly sweet, the soup color is apricot green or apricot yellow, clear and bright.

⑶ Air conditioning control withering: The green air conditioner used for oolong tea production can be used, and the temperature of the withering room is controlled at 20~22℃, and the relative temperature is 55%~65%, and the silver needles produced are excellent in color, aroma and taste.
